Ingredients

For the Pulled Beef

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 cup beef broth
  • ½ cup barbecue sauce

For the Loaded Fries

  • 2 pounds frozen steak fries
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup sliced green onions
  • ¼ cup diced red onion
  • ¼ cup pickled jalapeños
  • ⅓ cup barbecue sauce, for drizzling
  • Sour cream, for serving

Instructions

Begin by preheating your smoker or oven to 275°F (135°C). Coat the beef chuck roast with olive oil, then season it evenly with smoked paprika, garlic powder, onion powder, black pepper, and kosher salt.

Place the seasoned roast in a roasting pan and pour the beef broth around it. Cook for 4 to 5 hours, or until the meat becomes fork-tender and easily shreds apart. Once cooked, remove the roast from the pan, shred the beef, and mix it with the barbecue sauce to keep it moist and flavorful.

Increase the oven temperature to 425°F (220°C). Prepare the steak fries according to the package directions until they are crispy and golden brown.

Arrange the cooked fries on a large oven-safe platter or baking sheet. Sprinkle the cheddar and mozzarella cheeses evenly over the fries, then distribute the pulled beef across the top.

Return the tray to the oven for about 5 minutes, or until the cheese has fully melted and becomes bubbly.

Remove from the oven and finish with sliced green onions, diced red onion, and pickled jalapeños. Drizzle generously with barbecue sauce and serve with sour cream on the side.

Enjoy immediately while the fries are hot, crispy, and loaded with smoky, cheesy goodness.
