Instructions

  1. Heat the olive oil in a large skillet over medium heat. Cook the diced onion until soft and translucent, then stir in the minced garlic and cook for another minute.
  2. Add the ground beef and cook until browned, breaking it into small pieces as it cooks. Drain any excess fat if needed.
  3. Mix in the tomato paste, Worcestershire sauce, thyme, smoked paprika, salt, and pepper until well combined.
  4. Sprinkle the flour over the beef mixture and stir continuously for about 1 minute to remove the raw flour taste.
  5. Slowly pour in the beef stock while stirring to create a smooth gravy. Simmer for 8–10 minutes, or until the filling is thick, rich, and glossy.
  6. Remove the filling from the heat and allow it to cool completely before assembling the pies.
  7. Preheat the oven to 400°F (200°C) and lightly grease individual pie tins with butter.
  8. Cut the shortcrust pastry to fit the base and sides of each pie tin. Spoon the cooled beef filling into each pastry shell.
  9. Cut circles from the puff pastry for the tops, place them over the filling, seal the edges firmly, trim away any excess, and crimp with a fork.
  10. Brush the tops with beaten egg and cut a small slit in the center of each pie to allow steam to escape.
