Ingredients

For the Pulled Beef

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 cup beef broth
  • ½ cup barbecue sauce

For the Loaded Fries

  • 2 pounds frozen steak fries
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup sliced green onions
  • ¼ cup diced red onion
  • ¼ cup pickled jalapeños
  • ⅓ cup barbecue sauce, for drizzling
  • Sour cream, for serving (optional)

Instructions

  1. Preheat your smoker or oven to 275°F (135°C).
  2. Coat the chuck roast with olive oil, then season evenly with smoked paprika, garlic powder, onion powder, black pepper, and kosher salt.
  3. Place the seasoned roast into a roasting pan and pour the beef broth around it. Cook for 4 to 5 hours, or until the meat is fall-apart tender.
  4. Transfer the cooked beef to a cutting board and shred it using two forks. Mix the shredded beef with the barbecue sauce and keep warm.
  5. Increase the oven temperature to 425°F (220°C) and bake the steak fries according to the package directions until crispy and golden.
  6. Arrange the cooked fries on a large oven-safe platter or baking sheet. Sprinkle the cheddar and mozzarella evenly over the fries.
  7. Spoon the warm pulled beef over the cheese, then return the tray to the oven for about 5 minutes, or until the cheese is fully melted.
  8. Finish with sliced green onions, diced red onion, and pickled jalapeños. Drizzle generously with barbecue sauce and serve with sour cream if desired.
