Golden Savory Beef Pie with Flaky Double Crust

This hearty beef pie is packed with seasoned ground beef, tender vegetables, and a rich, savory gravy, all wrapped inside a buttery, flaky double crust. It’s the perfect comfort food for family dinners, weekend gatherings, or whenever you’re craving a warm homemade meal.

Ingredients

  • 2 refrigerated pie crusts (or one homemade double-crust pastry)
  • 1½ pounds lean ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium carrot, finely diced
  • ½ cup frozen peas
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 egg, beaten (for brushing the crust)
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Warm the olive oil in a large skillet over medium heat. Add the onion and carrot, cooking for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef and cook until browned, breaking it into small crumbles as it cooks. Drain any excess grease if needed.
  5. Mix in the tomato paste, flour, thyme, paprika, salt, and pepper until everything is evenly coated.
  6. Gradually pour in the beef broth while stirring continuously. Cook until the mixture becomes thick and forms a rich gravy.
  7. Stir in the Worcestershire sauce and frozen peas, then simmer for 3 to 4 minutes. Remove from the heat and allow the filling to cool slightly.
  8. Place one pie crust into a 9-inch pie dish, pressing it gently into the bottom and sides.
  9. Spoon the beef filling evenly into the prepared crust.
  10. Cover with the second crust, trimming any excess dough and crimping the edges to seal. Cut a few small slits in the top to allow steam to escape.
  11. Brush the top crust with the beaten egg for a beautiful golden finish.
  12. Bake for 35–40 minutes, or until the crust is crisp and deeply golden.
  13. Let the pie rest for about 10 minutes before slicing. Sprinkle with fresh parsley and serve warm.
