Instructions
- Place the peeled and cubed potatoes into a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
- Meanwhile, heat the butter and olive oil in a large skillet over medium-high heat. Add the onion, carrots, and celery, cooking for about 5–6 minutes until softened.
- Stir in the garlic and cook for another 30 seconds until fragrant.
- Add the ground beef, breaking it apart as it cooks, until browned. Drain excess fat if needed.
- Mix in the tomato paste and flour, stirring constantly for about a minute.
- Slowly pour in the Guinness stout while stirring, followed by the beef broth, Worcestershire sauce, thyme, and rosemary.
