Ingredients

For the Beef Filling

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced

  • 2 tablespoons tomato paste

For the Creamy Mashed Potato Topping

  • 2½ pounds Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup whole milk
  • ½ cup shredded sharp cheddar cheese (optional)
  • Salt and black pepper, to taste

Instructions

  1. Place the peeled and cubed potatoes into a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
  2. Meanwhile, heat the butter and olive oil in a large skillet over medium-high heat. Add the onion, carrots, and celery, cooking for about 5–6 minutes until softened.
  3. Stir in the garlic and cook for another 30 seconds until fragrant.
  4. Add the ground beef, breaking it apart as it cooks, until browned. Drain excess fat if needed.
  5. Mix in the tomato paste and flour, stirring constantly for about a minute.
  6. Slowly pour in the Guinness stout while stirring, followed by the beef broth, Worcestershire sauce, thyme, and rosemary.
  7. Simmer the mixture for 12–15 minutes until the sauce thickens. Stir in the frozen peas and season generously with salt and pepper.
  8. Drain the cooked potatoes and mash them with butter, milk, cheddar cheese (if using), salt, and pepper until smooth and creamy.
  9. Preheat the oven to 400°F (200°C).
  10. Spread the beef filling evenly into a baking dish. Spoon the mashed potatoes over the top, smoothing them out with a spatula. Use a fork to create decorative ridges for extra crispness.
  11. Bake for 25–30 minutes, or until the filling is bubbling and the potato topping is lightly golden.
  12. Let the cottage pie rest for 10 minutes before serving to allow the filling to set.
