Ingredients
- 4–5 lb bone-in lamb shoulder
- ¼ cup extra virgin olive oil
- Zest and juice of 2 large lemons
- 8 garlic cloves, finely minced
- 3 tablespoons fresh oregano, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 teaspoons sea salt
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 tablespoon Dijon mustard
- 1 large onion, cut into thick slices
- 1 cup chicken or lamb stock
- 1 tablespoon unsalted butter
- Fresh oregano sprigs and lemon wedges, for garnish
Instructions
- Preheat your oven to 300°F (150°C).
- Pat the lamb shoulder dry with paper towels and place it in a roasting pan or Dutch oven.
- In a mixing bowl, combine the olive oil, lemon zest, lemon juice, garlic, oregano, rosemary, smoked paprika, thyme, Dijon mustard, salt, and black pepper until well blended.
- Massage the marinade thoroughly over the lamb, making sure every surface is coated. For the richest flavor, marinate for at least 30 minutes or refrigerate overnight.
- Arrange the thick onion slices in the bottom of the roasting dish and place the lamb on top. Pour the stock around the meat and dot the surface with butter.
- Cover tightly with a lid or aluminum foil and roast for 4½ to 5 hours, or until the lamb is exceptionally tender and easily pulls apart with a fork.
- Remove the cover, increase the oven temperature to 425°F (220°C), and continue roasting for about 35 minutes. Baste occasionally with the pan juices to develop a crisp, caramelized golden crust.
- Let the lamb rest for 15 minutes before carving or shredding. Garnish with fresh oregano sprigs and lemon wedges, then serve with your favorite Mediterranean-inspired sides.
