Succulent Instant Pot Chuck Roast with Garden Vegetables and Homemade Gravy

If you’re looking for a comforting, hearty meal that delivers tender beef and flavorful vegetables with minimal effort, this Instant Pot Chuck Roast is the perfect choice. The pressure cooker transforms a well-marbled chuck roast into a melt-in-your-mouth centerpiece, while carrots, potatoes, celery, and onions absorb the rich flavors of the cooking broth. Finished with a silky homemade gravy, this classic dish is ideal for family dinners or special gatherings.

Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 large onion, sliced
  • 4 carrots, cut into chunks
  • 4 medium potatoes, quartered
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Fresh parsley, chopped, for garnish

Instructions

Begin by seasoning the chuck roast evenly with salt, black pepper, and garlic powder. Set your Instant Pot to the sauté function and heat the olive oil. Once hot, sear the roast on all sides until a deep golden-brown crust forms, about 4 minutes per side. Transfer the roast to a plate and set aside.

Add the sliced onion, celery, carrots, and minced garlic to the pot. Cook for 2 to 3 minutes, stirring occasionally, until the vegetables begin to soften and become fragrant.

Pour in the beef broth, Worcestershire sauce, and tomato paste. Stir well, scraping the bottom of the pot to release any flavorful browned bits left from searing the meat.

Return the roast to the Instant Pot and arrange the potatoes around it. Secure the lid, set the valve to sealing, and cook on High Pressure for 60 minutes.

Once the cooking cycle is complete, allow the pressure to release naturally for 15 minutes before carefully opening the lid.

Remove the roast and vegetables and keep them warm while preparing the gravy. In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry. Switch the Instant Pot back to sauté mode and slowly whisk the slurry into the cooking liquid. Simmer for 3 to 5 minutes, stirring frequently, until the gravy thickens to your desired consistency.

Slice or shred the roast and serve alongside the vegetables. Spoon the rich homemade gravy over the top and finish with a sprinkle of fresh parsley for a beautiful presentation.
