  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the brisket dry and season evenly with salt, pepper, smoked paprika, thyme, and rosemary.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the brisket for 3 to 4 minutes on each side until a deep golden-brown crust forms.
  3. Arrange the sliced onions and minced garlic in the bottom of your slow cooker.
  4. Place the seared brisket over the onion mixture.
  5. In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and brown sugar until well combined.
  6. Pour the broth mixture over the brisket.
  7. Cover and cook on the LOW setting for 8 to 10 hours, or until the meat is exceptionally tender and easily pulls apart with a fork.
  8. Transfer the brisket to a cutting board and let it rest for about 10 minutes before slicing.
  9. Strain the cooking liquid into a saucepan.
  10. Stir together the cornstarch and water to make a slurry, then whisk it into the saucepan.
