Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the chuck roast dry with paper towels and season lightly with black pepper.
  3. Heat the olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until a deep golden-brown crust forms, about 3 to 4 minutes per side. Transfer the roast to a plate.
  4. Add the sliced onions to the same pot and cook, stirring occasionally, until softened and lightly caramelized, about 10 to 12 minutes.
